Tis the season... for Vegetables
Now you all have heard by now about my gardening insanity... if you haven't heard then consider this the notification. I am a LITTLE crazy where my garden is concerned. Well, Ok maybe more than a little crazy. In the winter I tell myself that I NEED some green to break up the frozen monotony. In the spring I tell myself I would do anything for a fresh salad. By fresh I mean less than 20 feet to my table and picked within 30 minutes of eating it (let's admit it, it tastes better that way). In the summer and fall I thrive on each new vegetable as it comes in saving anything that could not possibly be eaten in real time. From jam to zucchini bread and ratatouille and stuffed tomatoes I revel in each new flavor that crosses our table. I enjoy eating well, saving the bounty for a rainy day and sharing what I have with others.
But in the day to day craziness let's be honest there are times that things wholly get away with me... and then the question is HOW do I eat healthy when I have 30 minutes to eat, get dressed and put lunch together before getting out the door? For me I LOVE grabbing a smoothie.. It's a GREAT way of grabbing something quick with out having to fuss with putting together a meal together. I just put it all in the blender and go.
